White to yellowish brown crystalline powder or milky white acicular crystals. Odorless, slightly bitter, tasteless in aqueous solution. Moisture absorption, light can promote its decomposition. Insoluble in water, soluble in hot water, ethanol, ether, propylene glycol, glycerin, cottonseed oil, peanut oil, lard. The melting point is 146 ~ 150℃, which is sensitive to heat and decomposes at the melting point. Therefore, it is not suitable for baking due to its poor stability and high temperature resistance.

Propyl gallate is white to light yellowish brown crystalline powder, or milky white acicular crystal, odorless, slightly bitter, tasteless in aqueous solution. Salt with one molecule of crystal water can be obtained from water or aqueous ethanol, which loses its crystal water and becomes anhydrous at 105℃. Melting point 146~150℃, it is soluble in ethanol and other organic solvents, slightly soluble in grease and water. The pH value of PG0.25% aqueous solution is about 5.5. PG is stable to heat, has good antioxidant effect, and is easy to react with copper and iron ions in color, turning into purple or dark green. It has hygroscopic property, unstable to light, and easy to decompose. PG has strong antioxidant ability to oils, and it has stronger antioxidant ability when combined with citric acid as synergist or BHA and BHT. PG has stronger antioxidant effect on lard than BHA and BHT, but its toxicity is relatively high
