It is used in the production of high maltose syrup, commercial starch modification, fermentation of bread and beer, as well as in animal feed supplements.

It is available as a liquid or as a powder formulation:

Available in liquid (brown) 20,000 u/ml. and powder form (light yellow)

Food grade: 100,000 u/g.
. Temp range: 35 to 65ºC (Optimum temp: 50 to 60ºC).
. pH range: 4.5-6.0 (Optimum pH: 4.8 -5.5)
. Unit definition: The amount of enzyme needed to hydrolyze 10 mg of reducing sugar from glucose in 30 minutes at 40ºC and at a of pH of 5.0 (Standard: QB 2526-2001)
