    What Is Natamycin Powder?

     

    Natamycin powder is an organic compound, a natural antifungal compound produced by Streptomyces fermentation, belonging to polyene macrolides, which can widely and effectively inhibit the growth of various molds and yeasts, and It can inhibit the production of mycotoxins, and can be widely used in food preservation and antifungal treatment.
    Natamycin was first isolated from Streptomyces natalis in 1955, and its activity is far superior to that of sorbic acid. In June 1982, the U.S. FDA officially approved natamycin as a food preservative and classified it as a GRAS product. Natamycin is a highly effective inhibitor of mold, yeast and fungi. It is used to inhibit mold, yeast and fungi in food. It is very safe and reliable for the human body without affecting the flavor of the product. It is widely used in the world. For cheese, meat products, pastries, fruit juice and other foods. The product is refined from streptomyces natalensis through submerged fermentation and multi-step extraction process, and its preparation is made by mixing 50% natamycin and 50% lactose.
    Natamycin has a strong inhibitory effect on mold, yeast and fungus, but has no inhibitory effect on other microorganisms such as bacteria and viruses.     Antibacterial Mechanism

     

     

    Natamycin powder relies on its lactone ring structure to interact with sterol compounds on the fungal cell membrane to form antibiotic-sterol compounds, thereby destroying the structure of the fungal cytoplasmic membrane. The hydrophilic part (polyol part) of the macrolide forms water holes on the membrane, which damages the permeability of the cell membrane, which in turn causes the leakage of amino acids, electrolytes and other substances in the bacteria, and the bacteria die. When there is no sterol compound on the cell membrane of certain microorganisms, natamycin has no effect on it, so natamycin only inhibits fungi, and has no antibacterial activity against bacteria and viruses.

    Natamycin is used to treat fungal infections, including Candida, Aspergillus, Fusarium, etc. It is also used as eye drops or oral medicines.
