      Broccoli is an edible green plant in the cabbage family whose large, flowering head is eaten as a vegetable. The edible part is the green tender flower stalk and bud. It is the mutation of brassica oleracea, which belongs to brassica, cruciferae.It contains lots of nourishment, such as protein, sugar, fat, vitamin and carotene etc. Broccoli is high in vitamin C and dietary fiber. It also contains multiple nutrients with potent anti-cancer properties, such as diindolylmethane and small amounts of selenium.Broccoli is also an excellent source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. It is honored as the "crown of the vegetables".

     

     In 1992 Hopkins scientists isolated sulforaphane from broccoli as the principal booster (inducer) of an elaborate network of protective (so-called phase II) enzymes that defend all aerobic cells against the constant damage of reactive oxygen (oxidative stress), DNA damaging chemicals (electrophiles), inflammation, and radiation. These damaging processes are the major causes of cancer and many chronic degenerative diseases. Sulforaphane is the most potent naturally occurring inducer of phase II enzymes, including quinone reductase and glutathione. Moreover, sulforaphane can reduce the incident of a number of forms of tumors and induce cell cycle arrest and apoptosis in various experimental models.
