    Lipase is a kind of enzyme, with a variety of catalytic ability can catalytic three acyl glyceride and other water insoluble esters of alcoholysis, esterification, hydrolysis, esterification and ester reverse synthetic reaction, in addition also show some other enzyme activity, such as phospholipase, hemolysis phospholipid, cholesterol esterase and active peptide acyl hydrolase (Hara; Schmid). The different activities of lipase depend on the characteristics of the reaction system, such as promoting ester hydrolysis at the oil-water interface, and enzymatic synthesis and ester exchange in the organic phase.

    The properties of lipase mainly include optimum temperature and pH, stability of temperature and pH, and substrate specificity. To date, a large number of microbial lipases have been isolated and purified, and their properties have been studied. They differ in molecular weight, optimal pH, optimal temperature, pH and thermal stability, isoelectric point and other biochemical properties (Veeraragavan et al.). In general, microbial lipase has a wider range of pH and temperature than animal and plant lipase, with high stability and activity, and is specific to substrates (Schmid et al. Kazlauskas, etc.).

    Lipase catalysis is characterized by its maximum catalytic activity at the oil-water interface, which was discovered by Sarda and Desnnelv as early as 1958. Water-soluble enzymes act on water-insoluble substrates at the interface of two completely different phases separated from each other. This is a characteristic that differentiates lipase from esterase. The substrate acted by esterase (E C3.1.1.1) is water-soluble, and its optimal substrate is the ester formed by short-chain fatty acids (C8).

    Lipase is one of the important industrial enzyme preparations, which can catalyze and dissolve lipid, transesterification, ester synthesis and other reactions, and is widely used in oil processing, food, medicine, daily chemicals and other industries. Lipase from different sources has different catalytic characteristics and catalytic activity. The large-scale production of lipases with transesterification or esterification functions for organic phase synthesis is of great significance for the enzymatic synthesis of fine chemicals and chiral compounds.
