    What Are Lactose Powder ?

     

    Pure Lactose powder is a disaccharide naturally present in mammalian milk. Secreted by the mammary glands of mammals, it only exists in the animal kingdom. Molecular formula C12H22O11. It is a disaccharide composed of glucose and galactose, which is obtained by dehydrating the hydroxyl group on the fourth carbon atom of glucose and the β-hemiacetal hydroxyl group of the first carbon atom in galactose to form a glycosidic bond. Therefore, the reducing property of the aldehyde group contained on the glucose molecule is still maintained. There are α-type and β-type isomers. The α-lactose that crystallizes from the mother liquor below 93.5°C contains a molecule of crystal water, with a melting point of 202°C, a specific rotation of +88°, and a solubility of 7.4 grams. The β-lactose that crystallizes above 93.5°C has a melting point of 252°C, a specific rotation of +34°, a solubility of 55 grams, and no crystal water in the molecule. The hygroscopicity of α-type sugar is low, and it does not absorb external moisture in a high humidity environment, which is extremely important for controlling the activity of water in food.
    In dehydrated milk and whey products, lactose often exists as amorphous crystals, has strong hygroscopicity, a solubility of 20 grams (at room temperature), and a sweetness of only 30% of sucrose. It is not suitable as a sweetener. It can only be used when the food is sweet or has a special flavor. The content of lactose in liquid whey is about 6.5%. After deesterification and clarification, it is concentrated at 55-60°C to make it solid, and the content can be increased to 55-65%. After cooling treatment, a large number of crystals can be obtained. Remove the mother liquor and wash the crystals to obtain slightly yellow edible lactose with a purity of 99.6%. If recrystallization is carried out, high-purity medical lactose can be obtained. Human milk and cow's milk contain 5-7% and 4% lactose, respectively. Lactose is often used in baby food, and it is also widely used in beverages, western-style sausages, sauces, instant foods, spice mixtures and meat products in the food industry to supplement low sweetness, enhance aroma, prolong sales period and increase product value. It can also be made into other derivatives (such as heteroemulsifying sugar) for processing different foods, and is also commonly used as a tablet preparation for tablets.
