Application:
It is used as an acid flavoring agent, color retention agent and preservative in food industries and emulsifying stabilizer for egg yolks, as well as in pharmaceuticals. It is generally believed that L-malic acid has important physiological functions, but half of the D-type in D-L-malic acid is physiologically ineffective.
In chemical industry it can be used as one of the synthetic raw materials for scale removers and fluorescent brighteners. Adding it to shellac or other lacquers can prevent surface peeling, and the polyester resin and alkyd resin produced with this acid are plastics with special applications.
