Dipotassium glycyrrhizinate is derived from licorice root, extracted with water and then added with potassium hydroxide or potassium carbonate for complete neutralization.

It is a white or off-white powder, easily soluble in water, soluble in ethanol, and insoluble in oils and fats of triterpene saponins.
