    I. application of Maillard reactor:

    2. Key points of Maillard reactor design: the stainless steel Maillard reactor uses protein, fat, amino acid, peptide, sugar and other substances to produce thermal reaction under high temperature and generate a special reactor with strong cooked meat flavor. It is a special production equipment for meat flavor. Other reactions can also be carried out. It can also be used as a small mixing tank. Maillard reactor is equipped with a special stirring unit and a matching condenser for heating and reflux. The jacket can be heated by steam or cooled quickly by cooling water, with insulation layer outside.

    III. structure of Maillard reactor:

    Maillard reaction kettle is composed of kettle body (cylinder), kettle cover (head), jacket or coil, upper mechanical mixer, transmission device (motor reducer), shaft seal device, support (platform, leg), insulation medium, etc.

    Nozzle configuration of Maillard reactor:

    The tank body is equipped with manhole (part-time solid feeding port), feed port, discharge port, sight glass, spotlight, breathing port, CIP (equipped with sanitary universal cleaning ball), SIP port, sterile sampling port, thermometer, temperature sensor, inlet and outlet of hot and cold medium, sampling port and other process pipe outlets.

    The nozzle can be designed and manufactured according to the process, and the connection forms of the nozzle include quick mounting chuck type, flange type and screw type, which are selected according to the process requirements.

    IV. characteristics of Maillard reactor:

    1. Maillard reaction kettle body: inner can SUS304 or SUS316L; jacket Q235-B or SUS304; outer insulation shell SUS304. The internal surface of stainless steel tank shall be polished with mirror surface, and RA of fine polishing shall be ≤ 0.4 μ M. The outer surface shall be mirror or 2B ruled plate. Jacket form: different jacket forms are selected according to different heating methods, including full jacket, half pipe jacket and detachable jacket. Thermal insulation material: it is filled with pearl cotton, rock wool or polyurethane for pouring and foaming to maintain the temperature difference with the outside world, so as to achieve the effect of thermal insulation. Surface treatment method of shell: mirror polishing or 2B primary matte or 2B matte surface matte or spray painting.

    2. Upper cover: two open movable covers (lower inclined bottom structure, or lower cone bottom (or elliptical, butterfly head) structure) are used for easy cleaning, and upper and lower cone head structure or upper and lower elliptical (or butterfly) head structure can also be selected. The inner surface of stainless steel shall be polished (roughness Ra ≤ 0.4 μ m), and the outer surface shall be mechanically polished to RA ≤ 0.8 μ M.

    3. Bottom structure of Maillard reactor: R angle is formed by spinning, no dead angle is found after welding and polishing with inner tank body, and it is inclined to 5 ° towards the discharge port, which is convenient for discharging materials without residue.

    4. Mixing device: the middle (eccentric) center of the top is used for mixing, and the output shaft of the reducer and the mixing propeller shaft are connected by a detachable coupling, which is convenient for disassembly and cleaning Mixing speed: 15-120r / min (constant speed or customized); according to the process requirements, the mixing paddle form: frame type, anchor type, paddle type, turbine type, etc. can be selected or designed according to the special requirements of customers.

    5. Configuration of Maillard reaction kettle: electrical control box (including thermometer, liquid level measurement, pressure display, switch, indicator light, spotlight switch, etc.), manhole, inlet and outlet, inlet and outlet of cooling and heating medium, standby outlet, cleaning outlet, thermometer outlet, pressure gauge outlet, vacuum outlet, etc.
