We've talked about oleic acid and sodium oleate as adjuvants in fat milk, but do you know what's the difference between them? In this article, let AVT xiaobian take you to understand the difference between oleic acid and sodium oleate!
Oleic acid is usually obtained from plants. In addition to the main component, it often contains some palmitic acid, linoleic acid and other fatty acids. Pure oleic acid should be colorless clear liquid, about 10℃ can be solidified into a soft solid, because of impurities and yellow. The color becomes darker gradually when exposed to air, and a series of oxidation products are produced. Light and high temperature can greatly accelerate the deterioration rate.
Oleic acid is insoluble in water, but it has good solubility in organic solvents such as ethanol, ethanol, chloroform and so on, and can be mixed in any proportion.
Sodium oleate is obtained by neutralizing oleic acid ethanol with sodium hydroxide or sodium carbonate. At room temperature is white to light yellow solid.
Relative to oleic acid, sodium oleate in water solubility rise, soluble in 10 times the amount of water, foaming, the formation of viscous liquid, due to partial hydrolysis into insoluble acid soap and sodium hydroxide, the solution is strong alkaline, and become opaque. Soluble in about 20 times the amount of ethanol, few insoluble in **, petroleum ether and other organic solvents.
