Potato peel (PP) is a major agricultural food by-product derived from potato processing. However, up to now, its green value-added is a biological resource as antioxidant polyphenols. The research is limited to the extraction process of water / ethanol based solvent, and other ecological and friendly methods are lacking. Hydroxypropyl beta cyclodextrin (HP - β - CD) is a hydroxyl alkyl derivative of β - cyclodextrin. The extract made from Hydroxypropyl Betadex is particularly advantageous in food and / or cosmetics without additional energy and time consumption. The results of this study showed that Hydroxypropyl Betadex could be used as an efficient and green method to recover PP polyphenols at near ambient temperature.
