Licorice root extracts are extracts with medicinal or other effects obtained from the roots and rhizomes of licorice through specific extraction processes (e.g., extraction with water followed by slightly warmed solvents such as methanol, ethanol, acetone, or hexane). Glycyrrhizic acid is one of the basic components in licorice extracts, also known as glycyrrhizin and glycyrrhizinol. It is a triterpenoid extracted from the roots and rhizomes of licorice, mainly the potassium and calcium salts of glycyrrhizic acid. Hydrolysis of glycyrrhizic acid produces two molecules of glucuronic acid and one molecule of 18β-glycyrrhizinic acid. Glycyrrhizic acid has a special sweetness that is about 250 times sweeter than granulated sugar.
